Meat

When you're a Hondorp, you become "one" with meat. It's true. I remember the first time eating a holiday dinner with Joel's parents and his dad talking about their cut of prime rib like it was a new born babe. I thought he was crazy (If you know him, you still might think he is!).

Anyhow, I think the love of meat has rubbed off on me, a bit. See below, exhibit A (rubbed and raw) and exhibit B (perfectly cooked, succulent and tender).

Joel has extreme patience when it comes to meat preparation, especially when involving charcoal and a fire. I will never, ever complain as I'm normally the recipient of his finely, rubbed meat.

This particular choice cut of pork tenderloin, was Joel's subject over Labor Day weekend. The rub he used was chosen perfectly and complimented our accompanying sweet corn and red skin potatoes.
