Most gals I know have absolutely fabulous husbands, but I just have to give a SHOUT OUT to my ROCK-STAR husband. I had out-patient knee surgery on Friday which has left me knee-up-in-the-recliner pretty much all weekend. I'd be lying if I told you I didn't have pre-op thoughts of...can't wait to see how HE multi-tasks, how he deals with Emma for a 48 hour period, how he keeps the house running WHILE taking care of Emma AND me. I need to eat my thoughts...big time. Let me start by saying that Joel is one of the most domesticated men I know (thanks Dad Hondorp for your wonderful example!) and I love it. He cooks, cleans, does laundry and seriously does a great job. Starting with Friday night, after my surgery, Joel grills up this insane chicken recipe. Really quickly, it goes something like this: a whole chicken, rubbed with olive oil and about ten dried spices. Then he took a can a beer and put some FRESH thyme, basil and garlic inside that which he stuck inside the chicken...all on the grill for a slow 2-hour cook. I can hardly write about it without salivating. It was beyond words, delightful!
Saturday he got up bright and early with Emma while I slept in until 9:30 and he basically waited on me hand-n-foot all day. Saturday night I had a couple girlfriends over so they could give me a hand with Emma while Joel went out to his fantasy football draft. Of course, Joel even cleaned up the house before he left so my girlfriends wouldn't have to see the disaster that I made by laying around all day.
Well it is Sunday now and Joel just brought up a load of laundry that he is folding...what a gem!
I'll post some pics showing some moments from our 'exciting' weekend.

3 thing(s) you said:
he is a gem. i would keel over if brad did a bird like that all by himself.
of course, you never know what men are truely capable of until you put them to the test so I shouldn't underestimate brad's abilities...
i'll miss you this week!!
I have had the divine chicken you have described ... and it's official name is BEER BUTT BIRD! It is muy delicioso.
Ohhhh...I have heard fabulous things about beer butt chicken! I like the name too. Catchy.
