You Say Tomato, I Say To-MAH-to...


"Scientists are suggesting that tomato lovers may be more likely to reduce the risk of serious disease. Lycopene, an anti oxidant which gives tomatoes their lovely rich red colour, helps remove free radicals from the body. Free radicals are unstable oxygen molecules and have been implicated in cancer and other serious diseases."

Here we go again. Another post about food in some form or another. Are you sensing a pattern here?! Oh well...how do you suspect we Hondorps keep our girlish-figures?!?! HA!

Anyways, I spent the day with my mom, canning over 60 quarts of tomatoes.We canned from 9:30 until 4:30 and the job still wasn't done when I left (Thanks mom for cleaning that mess up!!) What an accomplishment! I think we both stood to eat our 60-second lunch. And, Emma was an angel who decided to take 2, nearly 2-hour naps!

What does one do with a quart of canned tomatoes you ask:

  1. Blend it and you have tomato juice
  2. Use it for soup. It makes a FAB soup base!
  3. Drain 'em and dice 'em for a tasty taco topping
  4. It makes the BEST spaghetti sauce
  5. Simply have satisfaction in the fact that my hands preserved these savory, red-ripened, morsels so that we can enjoy them year-round!
Oh, by the way...I'd be remiss unless I mentioned that Joel HAND-PICKED these tomatoes, unassisted, unless you call Emma, being pushed in her stroller thru the mud, an assistant. Again, what a good hubby!
